Sugar icing:  

½ teaspoon of vanilla extract 

1 cup of icing sugar 

2 tablespoons of milk 

Cream cheese icing: 

2 tablespoons of whole milk 

1 cup of icing sugar 

Approximately 75g of softened cream cheese 

2 tablespoons of melted butter (optional) 

1 teaspoon of vanilla extract (optional) 


½ cup of sugar 

2 cups of milk 

2.25 teaspoons of instant yeast 

1 teaspoon of baking powder 

½ cup (1 stick) of melted unsalted butter 

5 cups of sifted bread flour (the proportions of this will be divided) 


½ cup of brown sugar 

0.25 cup of white sugar 

2 tablespoons of cinnamon powder 

0.75 cup of softened butter 

Step 1: You start off by preparing the rolls. In a big bowl, pour in the sugar, melted butter, and warm milk. Mix them all together thoroughly. After mixing, the mixture should not be too hot, just slightly warm. Allow it to cool for a few minutes if it is on the hotter side. 

Step 2: Over this warm mixture, sprinkle the instant yeast. Allow it to set. 

Step 3: To this mixture, add 4 cups of flour. With a big spoon, mix it all evenly. 

Step 4: Use a plastic wrap or towel and cover the bowl with it. Do not forget to coat the insides of the oil with a little bit of oil. Place this bowl in a warm place for 1 hour so that the dough inside can rise properly.  

Step 5: As the dough rises, you can start preparing the filling for the cinnamon rolls. In a medium-sized bowl, mix in the cinnamon powder, brown sugar, and butter. After mixing it well, put the bowl aside. 

Step 6: After an hour, the dough should have risen properly. After removing the towel, add the baking powder and 0.75 cups of flour. Mix it for some time and then place the dough on an even surface to knead it. 

Step 7: Lightly, knead the dough and add the remaining amount of flour in gradual steps. You will have to continue this kneading for at least 10 minutes until the dough stops becoming sticky and does not cling to the interiors of the bowl. A little bit of moisture on the surface of the dough is fine as long as it does not end up sticking to your fingers. 

Step 8: In a big rectangular shape, roll the dough out. It should not be more than half an inch thick. Ensure that the corners are sharp and even. 

Step 9: Uniformly, spread out the filling over the dough.  

Step 10: Roll the dough together until it takes on the shape of a log. With your fingers, pinch together the joints until they are properly sealed off. Then place it upside down, with the joints facing the bottom. 

Step 11: Use a knife to lightly press it on the log to leave even marks on the rolls so that they can be cut into equal chunks. Then, use a piece of sharp string to cut the log into pieces from where the marks have been left. You can also use floss. 

Step 12: After cutting the pieces equally, position all of them over a baking pan/ tray that has been coated evenly with butter. Cover the tray with a towel. Make sure you do not put in more than 4 pieces at a time, otherwise it will be difficult to put an eye on them and they can end up getting burnt. 

Step 13: If your toaster consists of the setting option regarding the estimated temperature, select the “toast mode” at 356 °F for 10 minutes. Do this twice or until the rolls are cooked. If your toaster oven does not have this option, select the toast mode and cook the rolls for 10 minutes at first. Then keep on adding 5 minutes until your cinnamon rolls are ready. 

Step 14: Now that the rolls are ready, allow them to cool properly so you can pour the icing. If you want to use regular icing, mix all the required ingredients and pour them over the pieces. For cream cheese icing, use a hand mixer or whisk to mix the ingredients together. Use medium speed.
